Poached Salmon and crabmeat stew

Yesterday we had seen how to go about beef stew, today I would like to share with you a rich fish stew. The recipe is as follows:

Ingredients

Salmon Fillets
Crabmeat Puree
Chopped Dill
Steamed Carrots
Steamed Broccoli
Steamed Peas
Steamed Mushroom
Cornstarch
White wine
Olive Oil
Crushed Garlic
Chopped Coriander
Black Pepper
Salt

Method

1. In a deep pan heat olive oil, saute garlic and coriander and add white wine. Place salmon fillets in it and poach covered on a slow flame for 15 minutes.

2. Separate salmon fillets from poaching liquid.

3. In the same pan saute all the veggies for 10 minutes.

4. Add crabmeat puree with salt and black pepper. Stir the veggie and crabmeat mixture well.

5. Add a spoonful of cornstarch to poaching liquid and add it to the veggie and crabmeat mixture.

6. Simmer this mixture for 5 minutes and add poached salmon fillets.

7. Simmer the stewin step 6 for 10 minutes and serve with pasta or croutons.
