Rohu fish in India is cooked with lots of love and flavor. there are infinite ways of cooking it. But I like cooking it with few simple spices. The recipe is as follows:
Ingredients
Fried Rohu fillets
Sliced Brinjals
Garlic-Ginger Paste
Sliced Onions
Coconut Paste
Cumin Powder
Coriander Powder
Curry Leaves
Red Chili Powder
Tamarind Juice
Mustard seeds
Fenugreek Seeds
Mustard Oil
Salt
Method
1. In a wok heat oil add curry leaves and seeds. Let it splutter.
2. Crispy fry onions and then add all the pastes and spices. Cook the spices for 15 minutes or until the fats leave the sides.
3. Add tamarind juice salt and cook for 10 more minutes.
4. Add water and fish, simmer the curry.
5. Garnish the curry with chopped cilantro, fried okra and sun-dried tomatoes. Serve it with boiled rice only.
