Saturday Night Cooking – Curried Salmon and Pumpkin

Pumpkin hastken the high this autumn and what can be best but a steaming bowl of pumpkin, potatoes and fish. The recipe is as follows:

Ingredients

Chopped Pumpkin
Yogurt
Salmon fillets
Chopped Potatoes
Chopped Onions
Ginger-garlic Paste
Slitted Green Chilies
Turmeric Powder
Cinnamon Powder
Salt
Mustard Oil

Method

1. Marinate fih fillets with yogurt. In a separate wok, fry onions until brown.

2. To it add ginger-garlic paste, slitted green chilies and turmeric powder.

3. To the mixture in step 2 add potatoes and pumpkin and cook until tender.

4. Finally add marinated salmon fillets, salt and cinnamon powder in to the pumpkin-potato mixture. Add water and simmer for 15 minutes.

5. Serve with rice.
