Senomyx formulates chemicals to swap flavors

senomyxKraft foods, Coca-cola, Campbell Soup and Nestle have collaborated with Senomyx flavorings to get rights from the company to use the ingredients in their food and beverage. This ingredient is a chemical that will make your taste buds sensor salt, sugar, monosodium glutamate and MSG products even in the absence of these flavors.

Its amazing technique has intelligently recorded the human genome sequence, to identify the taste receptors that create taste sensations and then it developed the chemicals, which will tickle those taste receptors that would be responsible in heightening the taste of flavors related to salt and sugar. Kraft, Nestle and Coke have agreed to reduce the amount of salt in their beverages and desserts while Campbell foods has agreed to reduce the amount of sodium in its soups.

The Food and Drug Administration might not be having any issues to deal with high sodium and sugars in the near future. The companies have got the key to manufacture low sodium and sugar foods without having to compromise with the flavor of the food. Senomyx flavor has assured that the product is completely safe as it will be used in very small quantities. Senomyx has got the approval of Flavor and Extract Manufacturers Association status and GRAS.

However Michael Jacobson, executive director Center for Science in the Public Interest has insisted on further research of the chemical’s health effects before incorporating it into food. He is right as a chemical which has the capacity to do great flavor impacts with small additions, might have other features too. The research is financed by Kraft, Coca-cola and Campbell soup and is expected to be in the food items this year. As we wait for further developments it is important to know what the chemical is.
