Summer Feast – Squash Casserole

56576576rHey I am back with my Summer foods and as said in my previous post, let us vegetate. Yesterday I gave my favorite recipe on cucumber, today I am going to tell you about squash. In India squash is prepared as a dessert, cake and also stir-fried with other vegetables.

Ingredients
Sliced Squash
Sliced Egg Plant
Sliced Tomatoes
Sliced Potatoes
Fried Prawns
Chopped Pumpkin leaves
Ginger-garlic Paste
Red chili Powder
Rock Salt
Oil

Method

In a wok fry ginger-garlic paste, all the vegetables and season it with red chili powder and salt. Fry it foe 20 minutes stirring continuously. Add Pumpkin leaves and prawns, cook covered with a lid until the leaves and veggies are cooked.

Eat it with boiled rice.
