Sweet Cake stands for baked vegetables

walnut cakeDepartment of Grain Science and Industry’s Food Product Development Team is going to bake a cake using vegetables. As per Emily Bonwell, graduate student in grain science and industry:

It will be high in antioxidants and vitamins, and you can eat your vegetables but it will still be a sweet cake.

This year they vie for Danisco Knowledge Award, which has a first-place prize of $10,000.

Last year the team had created Gimme’s Snack Stick, which got a third place at the fifth annual AACC Competition in Orlando. The main motive of the team is to present healthy products and as of this year it is trying to make people eat vegetables through tempting but healthy desserts. Jon Faubion, professor in grain science and industry says:

The goal is really to try and mimic what would go on in the product development function of a company.

The team also plans to formulate high-fiber drinks.
