Tapioca starch boosts ‘crumb and crunch’ of gluten-free foods

exThe Gluten-free market continues to excite consumers with new product formulations and now it is playing with the idea of attracting customers through improvements in the sensory properties of the food products.

Corn Products, manufacturer of refined corn products, is making a similar attempt with Expandex modified tapioca starch. This starch product claims to improve the texture, shelf life, and appearance of the gluten-free products.

As the product is used as a pre-mix ingredient in different formulations, the consumers do not have to worry about flavor. The product claims to give the same flavors as imparted by the wheat counterparts in baking applications.

Tapioca’s goodness is proven as a stabilizer and thickener and whether these properties can make Frozen entrees, chips, pretzels and other snacks and other baking mixes any better is in the hands of how its is processed by the manufacturer to cater to customer’s satisfaction in flavor and crumb.
