Vermicelli Pudding goes from ‘rags’ to ‘riches’

sewiyanSewiyan Di Kheer or Vermicelli Pudding is a dessert eaten in Pakistan during breakfast, after dinner or as a snack on the traditional ‘Id al-Fitr’ day. The Pakistanis prefer preparing the Sewiyan strands on their own and the preparation of this dessert is rich. Sewiyan is prepared by frying vermicelli in lots of butter until dark brown. To this milk is added and stirred continuously to prevent scorching and to this mixture is added cardamom, raisins and sugar and it is further cooked for 10 minutes. This dessert is made richer by adding four cups of cream. The garnish makes it perfect for a royal banquet with loads of pistachios and almonds.

Serve it cold with the final finish of saffron, silver foil and rose water…from ‘rags’ to ‘riches’ serves it right.
