I am back with Culinary Experiences from home-town and today I am going to tell you about a casserole typical to Orissa. This is a vegetable casserole, with very less calories and carbs. This delicacy is called as Ghanta and is served in festive occasions.
For Ghanta you need the following:
For main preparation you need:
Egg plants
Pumpkins
Potatoes
Carrots
Beans
Radish
Bottle Gourd
Papaya
Turmeric powder
Salt
For the paste:
Ginger Garlic paste
Coriander Powder
Poppy Seeds Paste
For the final tempering you need:
Fennel seeds
Mustard seeds
Whole Red Chilies
Oil
Crushed Cumin
Method:
In a vegetable steamer steam all vegetables with salt and turmeric powder. In a large pan transfer boiled veggies and add ginger and garlic paste, coriander powder and poppy seed paste. Add a little bit of water and cook the vegetables, stirring continuously, so that all the veggies and paste get combined together. In a separate pan heat oil and add red chilies, fennel and mustard seeds. Pour this over the veggies and garnish it with freshly ground cumin powder and grated coconut. You can make a similar Ghanta with fish head or meats.
