Pancakes for breakfast or desert, it’s for you to choose

Everybody loves a yummy breakfast of pancakes but if you want them as a desert, you can serve them with figs, homemade jams, bit of honey, a dollop of cream and lots of love.
This is the recipe for the basic Paper-thin crepes:

Ingredients:

2 eggs
200mls milk
1 teaspoon olive oil
100g plain flour
pinch of salt
extra olive oil for cooking
2 teaspoons liquid floral honey

Method:

Beat the eggs, then whisk in milk, honey, olive oil, flour and salt. Make sure the mixture gets well mixed. You can also use a food processor if you want to.
Allow this mixture to stand for half an hour.
To cook the pancakes, heat a frying pan with a teaspoon of oil. Pour a generous tablespoon of the batter into the pan, swirl it round so it spreads well and cook over a medium heat until the first side is golden.
Turn over carefully and cook on the second side. Stack the crepes as they cook so they stay moist. Fold them and serve as you want to.
