The talk of Italian cuisine brings to mind images of mouth-watering pastas prepared in myriad of ways to satisfy the taste buds. If you think these are foods you can enjoy only in a restaurant, then you are mistaken. Pastas can be prepared at home as well with much ease. Lets cook up a yummy pasta meal following this simple, quick and lip-smacking recipe.
Tomatoes (peeled and finely chopped) – 5 large-sized
Garlic cloves (crushed) – 3 large-sized
Garlic scapes (finely chopped) – 1/2 tbsp
Olive oil – 3 tbsp
Sugar – 1 tbsp
Red chili pepper flakes – 2 tsp
White pepper powder – 1/2 tsp
Fresh basil (finely chopped) – 1/2 cup
Salt to taste
Pasta (rigatoni/ penne/ fusilli) – 1 cup
1.) In a pot of boiling water, add about 1 tsp oil, salt to taste and cook the pasta until tender. Drain and keep aside.
2.) In a sauce pan, heat remaining oil. To this add the crushed garlic, garlic scapes, red chili pepper flakes and fry for a minute. Now add the tomatoes and mix well.
3.) Add the pepper powder, sugar and salt and give it a stir. Cook for few minutes until oil leaves the sides and tomatoes are tender. Stir vigorously at this point, so that a coarse paste texture is obtained.
4.) Add basil and cook for 3-4 minutes.
5.) Now place the pasta in plate and pour the hot sauce over it. Go ahead and enjoy this yummy pasta.
