Poached Salmon and Mushrooms in White Sauce

Salmon and mushrooms prove to be a wonderful pair. Let us see how we can go about it.

Ingredients

Salmon fillets
Dry White Wine
Thyme
Fresh Button Mushrooms
Chicken Stock
Crushed Garlic
Slitted Green Chilies
Salt
Black Pepper
Olive Oil

Method

1. Take enough white wine in a bowl, add grated carrots, celery and salt, and boil it.

2. Place salmon in white wine and poach it for 8-10 minyes.

3. In another saucepan poach mushrooms in chicken stock.

4. In a wok fry garlic until brown. Add poached mushrooms and saute it with thyme, salt and pepper.

5. In a separate saucepan melt butter and fry cornflour with salt and pepper. Set it aside and in the same sauce pan heat the poaching liquid of mushrooms (chicken stock), grated cheese, egg whites and simultaneously stir-in cornflour. See to it that no lumps are formed.

6. Add the white sauce in Step 5 to sauteed mushrooms in Step 4.

7. In a plate place poached salmon and pour the mushroom in white sauce over the poached salmon.
