Vegetables in Coconut Milk

ycurryThis sunday I am planning to go light especially with the summer heat. I am going to share with you a vegetable recipe made of cauliflower, peas, potatoes and coconut juice.

Ingredients
Cauliflower florets
Peas
Chopped Potatoes
Coconut Milk
Ginger Paste
Slitted Green chilies
Salt
Cinnamon Powder
Oil
Chopped tomatoes

Method

1. Fry the ginger-garlic paste and tomatoes in oil for 10 minutes.
2. Transfer this into a microwave dish and add the vegetables, coconut milk, salt and cinnamon powder. Microwave it for 20 minutes.
3. Garnish it with mint leaves and microwave for 5 more minutes.
Serve with rice.
